    I thought it was a non-dairy fruit-flavored thing, but sorbet is a thing

    I thought it was a dairy-based fruit-flavored thing, but fruit-flavored ice cream already exists.

      It's basically in-between sorbet and ice cream, it contains dairy but not as much as ice cream so it's richer than sorbet but lighter than ice cream.

    What happened to sherbet? I know it still exists but seems like it used to be far more popular than it is now.

      It was probably more popular because it had less competition back then. Its only competitors back then were ice cream, frozen yogurt, and popsicles. These things had a very finite range of flavors compared to today.

      Then ice cream started stepping its game up. They came up with more interesting flavors, and they've even gone "gourmet."
      Then people got interested in other fads and even started to seek internationally. Now we have frozen custard, gelato, dondurma (Turkish ice cream), kulfi, bingsu, kakigoori, halo-halo, etc.

      So now you have more options in the category of frozen dessert, and an innumerable amount of flavors for each and every one of them. This makes sherbet look boring to the masses.

        There are other words that are "acceptable" to pronounce incorrectly.

    If you are in LA there are a lot of Mexican street cart vendors that sell ice cream. The ice cream is more like a sherbet, with less dairy content and they sell flavors that are popular with Latinos (lime, coconut, mamey etc). Very good.
