This is one of my favorites, throw in a can of corn and brown the ham for good measure, super hearty, great as a full meal.

Here's another for good measure, don't bother making a separate roux, just mix the flour in with the veggies before adding stock.

            https://tarasmulticulturaltable.com/krumplileves-hungarian-potato-soup/

i've been doing this too. i'm a neet so i have all day to make stocks and soups. i stick the big pot right in the fridge and eat out of it for 4-5 days then start over. it's really the best way to stretch your ingredients.
            [...]
also op buy rice in bulk and make yourself, it's easy as frick and you'll save a lot of money from buying those stupid packets

When you make stock it gets really cheap, but even buying it in cartons both of these can be made for under $25 and last for 6+ meals.

yep it can be really cheap. I try to buy chickens when they're on sale for $5 or under, stock my freezer with them. roast it, eat a bit of it that night, then the next day take the rest of the meat off, make stock with the carcass, and then throw a soup together with whatever I have lying around, usually just whatever produce is cheap that week. serve over rice or noodles. and that lasts 4-5 days, maybe even longer.

This is literally my diet the past week plus peanut butter minus the alcohol

banana w/peanut butter and a hard boiled egg. rest of the day is just water or lemon water, or if I really can't deal with it I'll snip some green onions, mix it with flour and water and bake a simple flatbread.

I ate far better when I was actually homeless. Shelter food wasn't bad, salvation army boxes are fine.

My most hobomaxxing move was to spent $150-200 on an air fryer, a george foreman grill, and an instant pot (got most on sale/pricematched) and then learn to make basics in all three

Instant Pot takes the cake, I make chilis/stews in 20 minutes of work that last me the whole week and every other night I make some kind of rice+potatoes/mushrooms+spinach+spices+sometimesmeat heap of shit that tastes great, costs next to nothing, and makes me feel like I've had a full meal. I also make hard boiled eggs in it.

I've been able to get my budget down to like $150-250 a month this way. Not the lowest but I could easily cut it down to nothing if I got really desperate. Mostly it's high because I eat tons of fruit.

    Other hobomaxxing tips
    >make your coffee at home, then walk to a nearby cafe and get cream/sugar
    >or even better, do what i do: walk to nearby university campus, wait outside student lounge that has free coffee until someone opens the door, get free coffee, then go get cream/sugar at cafe
    >don't take credit cards/debit with you when you go out, only take cash, to add additional annoying steps to the decision "maybe just a $4 fast food item, come on"
    >wear clothes your mom bought you in your teens until you're 50
    >only date women who like that you're a bum

Also the foreman grill and air fryer are optional, I just like having easy baked potatoes and stuff. The grill is mostly strategically so that I don't get fast food elsewhere, since I can make burgers or a steak on it for $5-10 in 5 mins and be done with my urge to eat something like that for a week, instead of getting half the amount of shittier burgers for twice the price at a fast food place.

If I knew how to cook properly I'd probably save a lot more but cooking is for gays so this is a good sweet spot for me.
