      here

I have both and they are both good but very different. In general I prefer gas and find it easier to control the heat, but the induction is nearly 100% efficient (as in watts in = heat in the pot with nearly 0% loss of energy). The induction will bring a small pot of water to a rolling boil in like 60 seconds, a large pot in under 4mins. It'll get so hot I can sear beef for stew in like 3 seconds.

Boiling, braising, keeping warm are best on induction. Pan frying, sauteeing, etc are best on gas.

do the hobs just plug into a normal 120v socket or does that limit what you can do with it?

          Anonymous

yes it's portable, plugs into a normal socket like you would with a lamp or a dildo. most of them go up to 2kW (although the one in the OP pic is a palty 1.5kW but whatever).

When I lived in that house with a gas stove I would only use the induction for the really hardcore jobs. I would just unplug my toaster and plug the induction cooktop in.

I design circuitry for home lighting systems for a living. The bullshit you spouted about mains voltage vs. wattage isn't true. It's a Culinaly meme made up by europeans to make fun of americans for not using electric kettles

                Anonymous

Of course one can theoretically design a 120V outlet that delivers the same Wattage as a 230V outlet, but you'd need almost twice as many Amperes. Show me a standard 120V outlet in an American home that you can reliably pump close to 30 Amps through, for at least ten minutes. LOL, LMAO even.

Last time I looked there was not a single portable induction hob an the US amazon site that had more than 1.800 Watts.

You must be using different induction hobs than I do. Almost all of them have 300-400W as the lowest settng, which is enough to keep a gallon pot of potatoes at a roiling boil and evaporate an inch of water over 30 minutes. HUge waste of energy. the only portable induction hob that can actually do something resembling a low simmer is the IKEA Tillreda hob, which has 100W as its lowest setting.

First its called a range you uncultured euro, second induction is superior to gas and electric. It objectively heats the pan faster and cooks food faster than other methods. It also doesn't make your indoor air dirty as shit like a gas stove.

Sure it is true. There are plenty of vids on youtube that comparee gas and induction ranges and how long they take to bring a gallon of water to a boil. Even a simple 2.000W induction is considerably more than three times as powerful and fast as a gas burner.

Euro here, most people who have renovated their kitchen within the last 5+ years use induction hobs. Induction cooks ridiculously fast, it’s easy to clean, you won’t have burned food residue anywhere unless you’re literally moronic, generates little heat (great when you’re cooking in summer), you can switch between heat settings instantly (no cool-down period), and it’s very hard to burn yourself when you’re using it. The only downside that it doesn’t heat up wok pans very well, but it’s still manageable.

I still hear that sometimes from olde style CRT based TVs and cameras.

      ...
It's not so much a buzzing noise but a very high frequency and its easy to confirm with some old tv and a remote control, heck even our computers can be programmed to send the on / off signals using IR or whatever.
Over a period of time randomly turn on or off an olde time crt tv and document whether or not you can hear the high frequency.
I nail it just about every time, everytime with no interference.

      Anonymous

The noise isn't too bad unless you have a very cheap model. My 4-zone hob doesn't really start buzzing until I turn on the Booster mode.

        Anonymous

I like the frequency change when it's about to take me into hyperspace, it's like everything goes into a resonance phase then everything at once to nothing, then everything again is right but in a different place, even time if you're good.

Why do they do on/off cycling in the first place? Is the electronics/hardware too expensive to make so a constant temp can be done? It seems to me that with all the things we're capable of keeping a constant temp on something shouldn't be one of the hardest ones. Maybe someone's pushing an agenda.

Pulsed power/on-off cycling for low power settings have nothing to do with the working pronciple, be it induction, glass top or bare coil. If the cycles have to be done at all (apparently more expensive induction ranges dont need to do that) I have often wondered myself why the cycles are so long i.e. so low-frequency. Increasing the frequency would solve many problems pulsing power causes.
