    They are an absolute delight, but a serious pain in the ass to make, and quite finicky to make correctly. Not over-rated IMO.

    You need to do the beeswax + butter to coat them. Not too thick, not too thin. Get the copper molds if you can afford them.

    Age the custard for 2 days.

    Use a scale to figure out the exact amount you need and then you can go off level for the next ones.

    One of the most important things is to make sure the custard is thoroughly stirred before adding it to the molds.

    Ideally you want to stir custard, pour, and put in oven within a minute or 2 max. If you don't they will come out hollow.

    You'll need to figure out the precise temp settings for you oven. They burn pretty easily.

    They really are much better if you wait the full 2 hours after cooking them.

      They are called canelles, or canelè, and they are a 2 bite baked custard traditionally flavored with vanilla bean and rum.

      You coat the molds with a mixture of melted butter and beeswax. It gives a unique taste and texture to outside.

      If you like custard they are one of the best pastries ever.

    Made them myself once and had the "real deal" in Bordeaux later (which wasn't all that different).
    I would say they're a bit overhyped. I expected them to be really caramelized and crunchy on the outside but they're mostly leathery.
