I'm looking to get into smoking but I'm not sure what to look out for. I know I want a vertical smoker but nothing else outside of that.

    Have you got any experience at all with them? Have you had a smoker before? If you’re just getting started and don’t know what to look for, usually many pubs will have smoking areas you can find smokers there haha made you read this garbage suck my dick

    When you hear the term “contaminated food,” you might imagine clear signs of nastiness, like a bad taste, a foul odor or a weird color. But here’s the trouble with smoked meats: The same process that makes them taste so good also contaminates them.

    “The smoke itself is a source of contaminants that can be harmful,” Culbertson explains. Harmful substances called polycyclic aromatic hydrocarbons (PAHs) and heterocyclic amines (HCAs) form when meat is cooked at very high temperatures.

    Though grilled and pan-fried meats can also lead to the formation of PAHs and HCAs, studies show that smoking leads to higher levels of contamination. During the smoking process, the smoke both creates these substances and carries them onto the surface of the meat.

    “These compounds are created when fluids and fat drip from the meat onto the heat source and as a byproduct of the smoke,” Culbertson says. “Aromatic rings are formed, creating these harmful compounds that are transported to the meat from the smoke.”

      If this is shit from CA, then it is junk science - politically motivated crap to get people off cooking sources the Democrats can't control and onto electric-only sources they can control and take away from you. Even if they did the study properly (they didn't with that whole gas shit), media has undoubtedly twisted what the science actually said into a political statement, because no media outlet ever has been science literate.

      And "studies" that show this shit are garbage, it's all made up math that only arrives at a tiny ass percentage risk increase that is never significant enough. I prefer my experimental results that trump study shit every day: I have never gotten sick or injured from smoked food. If it was bad for me, it would literally make me ill.

      You know what I have gotten ill from? City water. Government provided food. Crappy restaurants. The things people want you to trust unconditionally.

      It does but so do pickles, kimchi, and all other preserved foods. That is if you're outright replacing fresh alternatives in your diet entirely.

    The main problem with vertical smokers is room. You aren't going to be able to lay out a full rack of ribs, or a full brisket. Unless the thing is massive, which is possible. Now ribs aren't that big of a deal, you can half them and they fit. But whacking a brisket in half is not great.

    The upside of a vertical smoker is you generally get more rack space, and the racks can be dish washed (unless the massive kind). So you can mass produce more stuff - more jerky, more half racks, etc.

    Here's the quick guide to wood sources:
    chips - used in electric and propane powered smokers, these are seasoned wood chips that you put in a tray and they generate the smoke. These will NOT produce a smoke ring. You need combustion products to do that. Chip smokers need to be refilled hourly or more. Comes in small bags and are about $2-5 depending on vendor for common woods, and up to 10 for rare woods.

    pellets - used in pellet smokers, these provide both the heat energy and smoke flavor. They will be auger driven and electrically ignited. These are great for set and forget smokes. The hopper will run out after about 6-8 hours depending on the model and speed of the auger (your temp). Pellets will be in 20lb bags for like 10-20 bucks depending on vendor. Some by wood type, others will be blends. Pellets are made by extruding wood dust at high pressures.

    lump - these are chunks of wood, seasoned, for offset smokers. For use on top of charcoal, or by itself for more expense. The hardest to use, because you must control the temperature manually. Most expensive option too.

      Thanks for this. Sounds like pellets are more up my alley for what I need. If I ever need something bigger I usually put it on the grill and watch it closely anyways

        Pellets are absolutely shit, one step above electric but still incapable of reaching the temp to truly smoke food.
        They are made of extruded kiln dried sawdust, which means all the vocs you actually want for smoking are already gone due to kiln drying.
        Either use charcoal and wood chunks or seasoned wood, anything else is a waste of time, effort, and money.

    where do you buy wood for smokers? I have a plancha and I've heard you can use it as a low-and-slow smoker and I'd love to give it a try

      Craigslist or FB marketplace is a good place to start, alternatively you can call fruit orchards and they may sell you wood too but it would need seasoning because it would be green still.

      Most tree trimmer services will haul and split any hardwood they get in half facing cords and full cords. But you better have a dry place to store them that’s not up against your house. Other wise termites will start eating the wood and your house.
