literally cancer from degradation products. use rendered animal fats, coconut oil, or clarified butter if you want flavor and good frying temps. refined seed oils get high temps but aren't ideal unless you're frying everything, in which case, there's something terribly wrong with your diet.

OP said EVOO. That image just says olive oil.
Olive oil that isn't extra virgin has a higher smoke point and is therefore better for deep frying.

ova' he' we use sunflower oil for deep frying, olive oil for everything else, and yes, some people even deep fry with olive oil, but for me it is inferior with sunflower oil, cause it deep fries better, long story short
There's no possible way the USDA recommends EVOO for deep frying. I'm not saying you should follow everything they recommend, but they're not telling you to do anything as obviously stupid as that.
olive oil is technically good for deep frying, but apart from being expensive, it gives a particular aroma to the fried food that can be either unpleasant or something that you grow tired of it after just a few bites.
I just use groundnut oil and replace it pretty often.

Both lies, Canola is know foremost for its neutral flavor profile.

Olive oil is great, and when it starts smoking a bit, dumping in a cup of water calms it down nicely
