Best mexican food I ever had was this little restaurant that could seat 10-12 people max, but basically was take out anyway. The only staff was an old lady and her son who were the cooks, and the husbands wife who ran the counter. Their mole was a perfect mix of Hispanicy and chocolate that rolled back and forth. The beef tongue picaditas were fluffy and crunchy, with soft salty shaved tongue. Even the prickly pear aqua fresca paired perfectly with hot food even on a hot summers day. Sadly they closed sometime during the covid shutdown and I really miss their food

I don't think it is possible for one restaurant to be better than another restaurant, therefore it is impossible for there to be a best restaurant for any genre.

It's the potato variety and where it was farmed that matters most. Tallow is important. Everything else is marketing bullshit.
These places do exist and yes they are subjective. There's no contradiction there. For a place to be best everything has to click: food, hosts, service, public, location, tableware. Everything. There are perfect, simple, cheap fresh fish restaurants. When they become famous a new brand of public shows up with new demands and the show's over.

The best "donuts" in my town are premium. Bst pizza, yes.
Among styles, I went through all the choices for New Haven pizza when my sis was at Yale, one or two restaurant at a time across many visits, and yes, there is a best there.
Specialities exist. Best bubble tea, best jamaican beef patties, best cuban sandwich, best bakery, even best pierogi, best bbq, best cinnamon rolls, best margarita!
