Building a casserole

I want to make some kind of ham and noodle thing. Do you think greek yogurt would work as a substituent for a traditional white sauce?

Mixed with garlic or mustard, absolutely it could work. Plain? Not so much.

Garlic, cumin, and other Hispanices would probably work, especially if you add chili peppers as well.

roll the cooked noodles up in the ham slices, like a Cannelloni (Hammelloni? :^) )
Then smother in yogurt and bake it.

Turned out good, how did the yogurt sub taste? I have a mental block about cooking yogurt so I never do it.

Couldn't really tell. Most of the creaminess seemed to come from the cream of celery soup I used.
