          Grill some chicken and get some onions and a few of your red peps. Slice all that up and cook it in a hot pan with some oil. Add salt and chili powder.
          Easy and delicious fajitas. Put that stuff on anything. Rolls, tortillas, rice, it's always tasty.

          sounds good for a meal but is there a simple prep I could do with them other than onions and peps?

            It’s close to red pepper soup but it has rice, ground beef, etc.

        Peel and deseed, cut in quarters, peel a little bit more. cut in slices of 0.5cm, simmer in olive oil with garlic, anchovy (careful, these burn easily), add a tbsp of red wine vinegar, cover until they've just gone limp, about 10 mins. Give it a stir every so often to avoid burning, add another tbsp of vinegar if necessary.

        You can keep bell peppers in olive oil until next year. Or use a neutral oil like peanut or grapeseed.

        There's all sorts of purées and dips on the internet. Adjika and ajvar are terribly underrated so I'll repeat those 2 because you can combine them with those moronic hot sauces you guys are obsessed about.

    You eat them. Two per day for 20 days. Raw. They are nutritionally beneficial, being high in vitamin C, and will in fact keep the doctor away, unlike apples which are trash.

      This. But after you roast them, puree them with some roasted nions and olive oil. Bangin' dip, similar to a baba ghanoush in concept.
