      It's not, unless you are on some sort of sodium restricted diet. 100% of the MSG fearmongering is racists pretending it gives them headaches when those same fucks can't detect it in a blind study or test. And they probably stuff Doritos in their face without complaint, and definitely don't complain about their steaks. No one is allergic to "savory" and if they were their life would suck super hard.

The fact asians use it as a crutch is really the only cooking problem - it's in damn near everything, and it probably shouldn't be just for mitigating sodium in people's diets. But that nuance isn't important to the racists (usually white boomers). That is why you can see some places with No MSG on their signs, and their food sucks as a result (I've been dragged to a few MSG free buffets, there is a noticeable difference in quality).

      The trick is to not overdo it and to use it in combination with salt. Some people actually fill their salt boxes/shakers with a certain ratio of salt and msg so it eliminates the guess work.

        There is also a line of reasoning by which I disagree, the one wherein one intends to add salt thinking "It is necessary that I do not skip salt, as it is conducive to my health and not my disease", like when one is doing low-carb and zero-carb or otherwise is, without salt, susceptible to dehydration or some other disease.
