      submerge it in water and boil for 45 minutes

      cook on one side until the flesh looks whitish haflway up, flipe and repeat for the other side, take a wooden spoon and pick a bigger piece and push down on it (not too hard). If the spoon goes through easily and the inside is white, immediately remove, if it isn't done cooking it'll feel kinda gummy and won't cleanly split the chicken.

      You have to remove it the moment it's done cooking, there's no fat so it overcooks almost immediately.

      Not trying to hate, this looks really good, but you should have made a simple white sauce.
      Also, try some pesto from scratch. I always buy up spinach and keep some in the freezer for when I want to make it.

        I used to grow radishes and would use the greens (when they were still young) to make a pesto. My brother and his wife would make one with their carrot greens. We both grew up with our mom's traditional basil pesto, but both of ours were pretty delicious, too.

        I melted a bit of left over parmesan in at the end with a touch of salt and pepper, but between cooking the pasta in buttery broth and the pesto it honestly didn't need much spice-wise.

        Its "tender", soft but not stringy. A gentle simmer usually yields pretty tender chicken, and its not like I cooked them very long beforehand, just enough for the butter and garlic to do its thing.
