I would try them if I was a better cook. I think they'd suck with my skill level. Hook me up with a tried n true recipe? Also.. are they pussy texture accepted? I will eat anything twice, just to be sure I dislike it. I'm a weenie with texture tho. I love chub.. gristle is fine.. but bones and chewy meats kind of make me wanna barf like a hair in your meal shuts me off immediately, no matter how tasty. Even bones in sardines kinda turn me off. Sucks to be a texture poosey.

Pretty normal meat texture, fairly soft but not like liver

Use lemon juice and parsley. Besides that, season them as you wish

imagine a kind of tough piece of meat, but when you go to chew into it and it gives and you bite through you immediately hit another piece of meat that was inside the meat, it's a weird experience

Chicken heart and liver taste exactly like any mammal heart and liver, same goes for the texture.

Nah chicken liver is vile, tastes like farts. Lamb liver is best.
Beef liver is overrated and mid. Pork liver is just gross, but not as gross as chicken liver.
tinned cod liver is also nice

Can you describe them? Are they tough? Bitter? My store only sells them in massive packages so I'd hate to buy more than fifty hearts only to find out I don't like them.

taste wise: taste like chicken, it's the texture and extra effort you hafta put into chewing that can be off putting.

Does it have a "squeakiness" like button mushrooms? If not I think I could frick with these.

          Anonymous

not sure what this squeakiness you're referring to, but there's definite push back when chewing. even stewing or braising for a long time it still requires a jaw workout compared to other proteins

Cook em an instant pot. Then air fry them. Then season.
I've done this with gizzard. It takes out the extra chewyness. Or sqeakiness.

        >What dish do you make with them?
I love them grilled on a skewer. Just toss them with some salt, pepper, paprika, a bit of chilli, lemon juice, then skewer them and grill on high heat. It's a great appetizer that only takes minutes to make and party guests are usually nicely surprised how good it is (with a piece of baguette, for example).

Not a fan myself, cant really stand the stink that organ meat has, but I feed them to my snakes (theyre LOADED with nutrients and healthy fats, if you have carnivorous animals try them out).
So yes, please, more people try them so they get easier to find

  12. 2 months ago

Don't wish that. You can only get one heart out of each chicken. The price could get very high very quickly if demand increased.

I tried putting hearts and gizzards in a stew and they were so chewy it was unpleasant. What’s the trick? Would deep frying them work?

Gizzards need low and slow cooking, hearts work better hot and fast.

just today i made chicken gizzards. 30 minutes in a pressure cooker in salted water, release and drain. fry up some onions and vegetables, season however you like (i've had cajun, curry and garlic sauce recently, all with gizzards), mix the gizzards back in and coat them in sauce or spices. serve over rice. i have this a few times a month, love me chicken gizzards
      >are they cheaper
they're pretty cheap around here in central europe, and you can buy them at the use-by date when they're discounted without any worries
      >where to buy in burgerland
i dunno, but i guess immigrant stores and butcheries are your best bet

i frickin love chicken heart yakitori
i think its worth it to take the time to butterfly them before skewering, that way you can rinse out any blood clots that are left in the hearts, if you salt them lightly ahead of time and give them a half hour in the fridge to dry out you get a ton of nice crispy edges after grilling

I hated livers and hearts and all that stuff as a kid but warmed up to them as an adult. I really enjoy them and would always go for the free duck heart during christmas dinner.
