      bagels and lox only make sense if there is pickled onions and/or capers in them. thats the whole point. bagel cream cheese and salmon is just sad, you need the bite.

    When I worked for a Sushi restaurant my boss and I workshopped some items. He was a Korean immigrant and didn't really get Western palates very well, but knew good sushi. Eventually we tried a menu item where we made a rice ball stuff with salmon, tuna, and cream cheese, then tempura battered and deep fried it before drizzling teriyaki and his house sauce over it(miso and horseradish mayo). It sold really well. Cream cheese is a natural pairing with salmon, and though it doesn't go quite as well with Sushi rice, its still pretty good. The familiarity draws in people who are intimidated by sushi.
