        Marmite on a hot buttered crumpet is a favourite of mine, I try to have only two but they often come in packs of 6 and you guessed it, I scoff the lot in one sitting.

          NTA but crumpets rise quite heavily having lots of holes leftover from air bubbles and end up with a slightly enjoyably chewy texture. They're ideal for putting butter and maybe something sweeter on top of as it melts and sinks into the holes. I don't know why the batter behaves differently but I'd guess it has a bunch of whatever ingredient to persuade the bubbles to form and the structure to end up airy. Picrel might help understanding it a bit better though for actually eating you'd toast them.

          As so which is the canonical way to eat them. I suppose when I sit down and think about it though pancakes you generally wait for bubbles to start appearing when flipping so maybe it's fundamentally an unflipped pancake with something to keep it stiffer? There's also a Scottish variant which is flat like a pancake but with the holes still in evidence but then a Scottish pancake is more like what the rest of the world calls a drop scone.
