It amazes me that people thought deep-frying a couple of potatoes in processed vegetable oil instead of rendered animal fat would make the fact that you're deep frying your vegetables and eating too much while sucking down brown sugar water any goddamned healthier.

I don't think it tastes better. It's made with refined vegetable oil that's mostly flavorless, and hydrogenated oil leaves a greasy film in your mouth because of its high melting point.
It was cheaper to produce and I guess quality was an issue sometimes with animal fats because it was being marketed as better tasting than not so fresh lard.
They tried to market it as being healthier, but we know that's completely wrong now. I'm not sure if it was seen as healthier because plants themselves are less likely to cause food poisoning compared to animal products.
