        We have the meat course and it will look moreorless like the OP pic less the rice. The first course will have its sauce if it's pasta-based but no meat (unless it's bolognese). We don't wipe each spaghetto clean of sauce to eat it separately then spoon the sauce into our mouths or whatever bizarre thing you seem to think.
        As for the meat course, if the sauce was made with meat, the pieces are served then. With bread. If the first course was rice rather than pasta or the pasta was served in a soup, the meat course is served with vegetables and, often, potatoes as well. Example of a typical meal:
        Plain risotto ("risibisi" IE rice with peas in local dialect) for first course. Sausages, sauteed spinach and "stovetopped potatoes" (patate stufata) for the second course and a green salad with homemade vinaigrette or citronette for the third/salad course.

    not always but when I do I eat in order of what gets ruined if it gets cold quickly (fries), or in order of what I don't like to what I do like.

    My entire life I've always gone bread > all vegetation except potatoes/rice > potatoes/rice > main. Only in my mid 30s do I now find myself unable to finish my main in this order, so I now generally only half finish my potatoes/rice sides in order to fully consume my main.
