Do you NEED to eat vegetables if you meet your vitamin goals in other ways?

Assuming you get vitamins from meat (especially organ meat like liver) and dairy, and that you get fiber from whole grains and fruit, is there any reason to eat vegetables?

What would I be missing on if I only eat meat + whole grains + fruit, and never ate any vegetable?

Nutrition experts universally claim you need to eat tons of vegetables to be healthy but I just can't find what the frick vegetables have that other food doesn't.

      Cooking leafy vegetables is just alien to me because I never had the habit. Also when I look up their micronutrient profile I just get depressed. I go through a lot of effort to eat 300g of a variety of vegetables and in turn get like 20% of my daily nutrient needs. Meanwhile 100g of liver have me set for 3 days worth of nutrients.

      I am not going out of my way to avoid them, but they would almost never come up in my daily diet naturally

I mean I mostly eat them because they're delicious and because I eat a fairly well rounded diet just never worry about it one way or the other. To me the thought of not eating them is what's weird to me. If eating just liver so you don't have to worry about it helps you function in life then go for it.

            I don't eat any uncooked food and I only eat broccoli, brussels sprouts, and asparagus in terms of green vegetables. Sometimes spinach and arugula if it's cooked and put into a pasta or indian food. I eat a lot of onions, root vegetables, and peppers though. Mushrooms aren't a vegetable but I eat them a lot. Do you eat potatoes and mushrooms?

    long term, you would risk osteoporosis from vitamin a overdose, or you would be deficient in magnesium. you'd also be taking in a lot of copper if you relied on beef liver, but that probably wouldn't do you as much harm, you'd probably just have the shits.

      There are literally no nutrients in vegetables that you need. Meat has everything you need in it.
