Out of all the meat substitutes, it's one of the meatiest unless you've foraged (or shelled out big bucks) for the various meaty mushrooms like oysters, hen of the woods, etc. Given that those mushrooms can be difficult to find even in a store, eggplant is better for that because it's cheap and widely available, easy to grow too. It absorbs oils and fats very well, great for frying, as in eggplant parmigiana. I eat it a lot during lent.
Oh damn, that looks good. That was always the first thing I'd order, when trying out a new Italian joint. If they couldn't do a decent eggplant parm, they got crossed off my list.

Maybe add some pineapple as well, next time?
pineapple is pretty boss, but you also have to add anchovies to balance out the sweetness.
