What can I make with a ton of eggs that doesn't include a lot of sugar? I don't like sweets.
Already made a frittata, was thinking about making bread using eggs in lieu of water.

      Hardest part is finding a suitable container-(not that hard.)
      I've had great results with midway between soft and hard boiled eggs, with White vinegar, salt, sugar dill, peppecorns, whole allspice pods, Bay leaf(3) and stcked intermittently with sliced onion.
      makes an amazing egg salad if you use a few pickled eggs, diced pickled onion and good mayonnaise.
      ...and I don't even really like egg salad that much.
      *(Bonus points for arugula and lightly toasted homemade bread for the sandwich)

        I love me some pickled eggs. They're a pain to make because I have my own hens and fresh eggs are hard to peel. I age mine in the frigde for 6 weeks or so before cooking.

              that cooking your eggs at a boil for 5 minutes, then rest for 5 minutes, THEN ICED for 5 minutes(under running water, no less,) is the best and easiest way to peel good, aged eggs.

      OK, i just got done mixing my egg bread, I used 660g of egg, 40g of yolk (reserved 2 whites for brushing on the formed rolls later on), 15g of salt, 4g of yeast & 1000g of bread flour. it mixed up fine, but the eggs were cold so it will take a while to rise.

    When I got a bunch of free eggs, I made and dried my own egg noodles. idk if you're meant to, but I blanched the formed noodles to cook the egg figuring it would lessen the risk of food borne illness without causing to much change in the overall quality of the noodles. Thereafter, I coiled them in nests if 100g each and dried them out for long-term storage. Good way, imo, to use up a lot of eggs and not have to eat it all immediately.

    If you want to use a ton of eggs there's nothing better than auflauf/German Pancakes. It's a pretty straightforward recipe too.

    1 cup flour, 1 cup milk, 6 eggs, some salt. Melt 1/4 cup to 1/2 cup butter in a (preferably glass 9x13) pan, wait until the butter is sizzling, pour your batter in, place in a preheated 400 degree farenheit oven for 20-25 minutes; you're looking to get the edges crispy.

    Very hearty, eggy dish that works well plain especially if you're using more butter, but is intentionally a base for crepe-style toppings; less relevant since you're trying to avoid sugar, but that can get you in the ballpark of what it's typically used for.

    my egg bread took a while to rise due to the cold start, but I'm now though the bulk fermentation, dividing and shaping phases and am now waiting on the final rise. I cut them to 10 pieces of 160-170g each. I guess they'll go into the oven in about 2 hours or so

        no, its already a done deed, just a basic 70% hydration bread with eggs in lieu of water. the dough was a little overmoistened maybe, but not too much. maybe the fat in the eggs cut the gluten too much for 70%, I might go one egg less if I try it like that again. I tried some of the bread and its just fine. I'm leaving a stick of butter out on the counter tonight so I can make chive butter to go with the bread tomorrow
