Just got back from a two week trip across japan. Spent 5 days in Shinjuku just walking distance from kabukicho.
Honestly, any random restaurant you try is going to be far better than your average restaurant in the states. I didn't have a single bad meal. If you hit up any place you hear about online, then chances are about 1,000 other tourists also heard about it, so get ready to wait up to two hours.
Kabukicho itself was fun to walk around, but none of the restaurants I tried really stood out compared to everything else I ate (that's not to say it wasn't worth it, it was definitely good).
Definitely check out Tsukiji outer market for sushi. There's a ton of great places there without lines. Omoide Yokocho is really close to kabukicho and is definitely fun to visit, but can get a little crowded. There always seemed to be an open seat somewhere though when we walked through.
If you want to try a ton of things at once, then find a more modern looking Izakaya (easier to order from). That's where I was able to find stuff like horse meat and raw chicken.
any standout yakitori joints? love eating weird pieces of chicken on a stick, but it was always expensive for absolutely no reason in NYC
Omoide is pretty much a strip of small yakitori bars. Outer market had quite a few stands where you could order them as well.

Golden Gai is an awesome area to spend a night out drinking. Ramen Nagi is a 2nd story spot, I liked it very much.
