    I've never made Mexican before but right now I have mexican spiced beef chuck slow cooking in the pot, I want to shred it and make tacos tonight.
    I'm thinking making up some tomato, jalapeño, coriander/cilantro, white onion in lime juice. Top them with some shredded fresh mozzarella and some original cholula. Am I missing anything? Is it recommended to use 2 corn tortillas like in your pic?
    My brother wants to add avocado, corn and enchilada sauce but I think that might ruin it.

          Get corn tortillas, and roast them on an open flame until they char just a tiny bit and get crispy. If you want to go to the next level, pan fry them in a splash of oil until crispy at the edges and soft in the middle.

          Flour tortillas are for gueros who think they are dieting and we use them to fatten up the baby pits or white people Mexican night. Real flour tortillas are almost paper thin so you can roll burritos up right.

              I've done the pepsi taste test on Oaxaca vs mozzarella and it is exactly the same thing barring some extra sodium. if you want to go the extra mile, cotija cheese is extra good as a topper, it's similar to maybe a good good Parmesian and cheddar mix, salty af and crumbled just right for tacos.

        It looks pretty good to me. Pickled jalapeños might overwhelm a little bit with the vinegar taste. Especially if that’s a hot sauce with vinegar on there as well.

        Pickled jalapeños are pretty much exclusively used on nachos or in beans around here. But I’d def eat the taco

        no need for jalepnos on a taco, when salsa with jalapeno can be introduced, you want a taco to be simple; meat dish, onions and/or tomatoes and herbs (cilantro) anything else should be added in the form of a salsa, ie: tomatillo or tomato
