    The best grits are the ones you make at home. Restaurant grits are plain so that they are palatable to most people, with the expectation that the customer will dress it up with butter or soforth.
    The real question is savory grits vs sweet grits, and I vote savory

      Grits made with milk instead of water, and a chunk of fake ass velveeta cheese or a Kraft single, and maybe a little pepper or butter. Nothing better.

      My ex is an Amerisoutherner whose family were all in on savoury grits. The first time I heard of sweet grits, my immediately thought was that I'd rather have porridge/oatmeal.

                I wouldn't know the first thing about making the stuff but y'know what: I'm gonna see if such a thing exists.
                Maybe it would be like purple sweet potatoes (no, not yams; actual sweet potatoes that happen to be purple). They don't taste vile like the regular orange ones do.

    I like the colored grits myself. Not sure if the color makes that much difference in taste though. Pic is what I got last time and they were pretty good, better than standard grocery store white grits. The best grits I've ever had were made from green Oaxacan corn I grew and nixtamalized myself.

    I grew up with Quacker Instant Red-Eye Gravy grits as well as homemade ones.

    This is like a comfort food to me, a small bowl of that with an over easy egg on top and black coffee is very comfy.

    I love grits, shrimp n grits is my family’s Christmas Eve dinner
    TO COOK GRITS PROPER
    Start at a high boil and stir constantly, I like to do 50/50 water/milk to get some dairy in with minimal chance of scorching. Once they start thickening drop the heat just enough around medium high so it won’t splatter and burn you. Because grits are an inconsistent size, the smaller bits will cook through and thicken before the larger pieces, so if you stop stirring for too long it will make clumps. Once they’re done I like to add sharp cheddar, crumbled bacon or diced ham, some hot sauce and Cajun seasoning, and then cook some over easy eggs to stir in runny yolks and all
    For shrimp n grits I’ll make stock from the shrimp shells and replace the water with it, I’ll just use Parmesan and butter in the grits, then pan fry the shrimp in butter with minced onion and garlic, Cajun seasoning and black pepper
    Never be afraid to throw in excessive amounts of butter into grits, they soak it up like cornbread
