I am a simple man. Ketchup, fried onion, pickle, mustard. The Polish immigrant monkeys of Chicago apparently add sauerkraut, but I think that's excessive.

I like pickle relish and ketchup on my dogs but there are a lot of good options. Not a big mustard guy but it's good on occasion.

Maybe if we're talking about some sort of mild Euro "catsup" but in my neck of the woods ketchup is this overbearingly sweet concoction that overpowers the taste of anything you put it on.

I make a Hispanicy relish with diced onions, pickles, and jalapenos soaked in pickle juice and dill
Good mustard, some hot sauce and as much sauerkraut as can be physically stacked on top. A little mayo on the bun is good too. In college I would frequent a hotdog restaurant/cart near campus that had a huge condiment bar, I really liked the crispy jalapeno flakes they had.
Diced onion is good too but hotdogs are a lazy meal for me and I'm not going to bother dicing an entire onion for a couple hotdogs.
