      Why is everyone fat and unhealthy now even though over the past few decades saturated fat was replaced with seed oils? Shouldn't people be healthier? Shouldn't processed foods, rich in seed oils, be making people healthy?

        speaking for myself, I'm overweight not because of seed oils specifically, but because I decided to let myself go and eat whatever I feel like for the rest of the year. I've gained like 20kg in the past couple of months. I'm gonna start a diet in December or January next year, I promise!

        Did you look at the graph you posted?
        The heart disease deaths go up before vegetable oils are widely used. A lifestyle disease like heart disease should be showing up years after the cause, not instantaneously and certainly not decades before.
        Industrialisation in general strikes me as a more likely cause.

            Sure, if you deliberately ignore cause and effect you might come to the conclusion that seed oil use will somehow travel back in time and cause heart disease but that seems unlikely to me.
            More likely they both have the same cause but no direct impact on one another.

            Trends usually come about after the thing causing it becomes widely available. Like the usage of Thalidomide increases when it comes on the market in 57 and is shown to reduce morning sickness. Then we start seeing reports of birth defects, and by 59 it's discovered to also damage nerves and is subsequently no longer offered otc. Finally in 61 it's taken off the market because everyone noticed that this happened after taking the drug.

    A lot of rapeseed fields here in Denmark.
    A few years ago farmers wanted to switch from the usual cultivar with yellow flowers to a more productive one with white flowers, but were met by so much anger from the public that they gave up on it.
    People like their yellow fields in Summer over here.
