Why is everyone fat and unhealthy now even though over the past few decades saturated fat was replaced with seed oils? Shouldn't people be healthier? Shouldn't processed foods, rich in seed oils, be making people healthy?
speaking for myself, I'm overweight not because of seed oils specifically, but because I decided to let myself go and eat whatever I feel like for the rest of the year. I've gained like 20kg in the past couple of months. I'm gonna start a diet in December or January next year, I promise!

The heart disease deaths go up before vegetable oils are widely used. A lifestyle disease like heart disease should be showing up years after the cause, not instantaneously and certainly not decades before.
Industrialisation in general strikes me as a more likely cause.
