How do I cook with thai peppers without effectively gassing myself? I sauteed with them last night and caused the entire household to cough nonstop for like 3 hours. Its the next day and my sinuses are still raw.

    i'm a chef and this is basically the first thing i've struggled with, here's a very famous trick i always use all the time to ease out the burn:
    -step one: oil up your pan real well, any oil will do
    -step two: heat it up well, until the oil is at it's frying point, not too hot until or else it'll burn!
    -step three: bear with me now, the next step is where it's all at, what you're gonna do now is get an ice cube and your capsicum veggie/powder of choice (thai peppers for you ofc)
    -step four: toss in the peppers, stir, then carefully add the ice cube to the pan
    -step five: after thirty seconds, introduce some cold water into the pan and let it evaporate all the unwanted oil
    -step six: enjoy!
