As long as you don't re-freeze meat it's fine, so I usually buy fresh, cut into ~4oz chunks, and freeze. The frozen liquid together with the tender meat makes for a delicious and healthy snack any time of the day.

Fajitas, stir-fry, stroganoff (strokin' off, amirite? lol,) grilled with chimichurri, etc. Hell, even grilled with just some salt, it's pretty good.
