    Rub them down with whatever spices you like...smoke them at 300 degrees until they are done and crank the heat at the very end to crisp them. I like my chicken legs very well done and crispy.

      Pretty much this, but once you turn up the heat I would also brush them with some olive oil, or butter.
      Also as far as seasoning the goes, I would recommend rubbing them with rosemary salt, and black pepper. Pic related for rosemary salt recipe.

    I hate drums, so I'd just simmer them until the meat is done, then strip the meat and return the bones to make a stock.

    Olive oil
    Soy Sauce
    Sriracha or Sambal
    Honey or brown sugar
    Garlic
    Pepper
    Lemon

    and let it sit overnight then just bake at 400

    make a marinade of kecap manis, nam jim jaew, chopped scallions and leave the chicken marinating in the fridge overnight then bake in a oven. you can try coating them in flour and air frying them

      Mine is acidic

      i find that this is the best. also i've had good results with scoring the skin in a crosshatch pattern as well

      brining chicken is good policy as well. the easiest way is just pickle juice
