    burgers should always be well done since they are ground beef formed into a patty. the method of leaving the interior uncooked only applies to steaks where the meat is too dense for parasites and bacteria to penetrate beyond the surface, in which case searing the outside is sufficient. but once the meat is ground up then all those pathogens are dispersed throughout the food and it must be cooked entirely. eating a medium rare burger can very easily lead to getting sick

        Obviously a high quality meat from a fancy restaurant is not the same as factory ground beef that had been sitting around for days . The Michelin star restaurants that serve steak tartare mince up fresh high end steaks in the kitchen right before serving.

        Oh, and that raw egg they serve on top of the raw meet? In Europe, all chickens are vaccinated for Salmonella, so this is OK.
