One, without an island. Islands are fucking retarded. All you ever do is run around in circles because the thing you need is always, ALWAYS, on the other side. And when you're done cooking you get to stare at dirty pans while you eat.
There's a special place in hell for morons who develop, buy and/or use cooking islands.
Just one. Central, A couple of large uprights and a good sized chest freezer. Good sized pantry. 6-8 burner stove, double oven (or a single, large oven). Stainless and tough textured Marley/good looking linoleum for easy cleanup, but incandescent (coloured) lights for easy seeing - fucking hated cooking under fluorescents and white LEDs. Autoclave and a 4 compartment sink with drying racks for quick, easy dishes. Maybe a dumbwaiter if there's a reason to serve food on a different floor, or a conveyor if things need sent to the foyer.

Just get high CRI LED bulbs in the color temperature you want. 92+ CRI.
