I have been getting it quite often, a couple times a week but I have been cooking for years and I know what in doing

This is true, capsaicin will aggravate stomach ulcers and has a laxative effect in enough quantity. But it also helps slow down acid production, so it can help protect the stomach too.
So if your diarrhea is also burning your ass, that is the root cause. If it is not, then clean up your fucking habits and sanitize your kitchen.

i have a bad habit of eating leftovers waaay past the five day to a week mark and have had diarrhea a few times from that but i cant think of any time i've gotten sick from contamination.

Never? I only get the shits from garbage wage slaves make for me, and when that happens I don't go back to that particular place.
You probably aren't following food safety practices and it's giving you the shits. Either undercooking stuff, cross-contaminating shit, not sterilizing surfaces and tools, or flat out failing to wash your hands. It is unlikely you got it from FDA inspected shit, but Walmart is notorious for their bad/swapped meat, so maybe that could be the source too.
If you have mold in your kitchen, you should probably clean that shit up with bleach.
I used to get severe diarrhea and migraines every few weeks until I figured out I was allergic to wheat.
Are you often preparing chicken of some kind? You might be undercooking it. Less likely to get sick from beef and pork but it could still happen.

I don't get it, I make the same thing at home in my filthy kitchen with expired ingredients and it never bothers my stomach.
