    Depends on the cut of meat. I'd eat steak raw if I got it from a trusted source. The rate of salmonella in chickens from the supermarket is exceeding low so unless you are unlucky you won't catch salmonella. Pork you should always cook well done due to parasites considering pigs will eat literally anything including rotten slop.

        Raw pork/metz was considered safe in Canada for quite a while, but we've found Trichinosis a few times in the past two decades.

      not anymore. modern industrial raised pork are kept in conditions where they are not living in filth, and are fed a very controlled diet.

      the only pork that you need to cook to done, is free range pork, slop fed pork, and wild boar/feral hog.

    Are there particular stakes that are good done blue? What's your hot take? If I'm having a wagyu, for example, then it's a pleasant medium rare for me.

      Well salted tenderloin steak's usually good blue. Tougher and fattier cuts (or animals) need to be rare at least.

    I’d say yours is on the cusp, but since it was sliced from a roast, it’s usually assumed that when someone wants rare they mean give a piece from the center.
