    They have four or five dishes that are fine. They have a lot of crap. A lot of unhealthy, fried food. And then the association with its people, the severe levels of trash in the oceans and on philipino streets. And the association people have of the super poor eating recycled garbage.

    It all adds up to paint a somewhat fair picture.

      China is more of a dump than the Philippines, with literal smog cities forcing people to buy bottled air just to breathe, and Chinese cuisine is famous for eating life insects and animals. Yet, Chinese cuisine is among the top world wide.

      Personally, I think its' all perception. If the Philippines get rich eventually people will apreciate their cuisine.

          Its because Flip food hasnt been renovated to fit American standards whats popularly called "Chinese Cuisine" is actually Chinese-American reconverted stuff. Your Dim Sum popular among Chinese Americans are different to the Bat Soup popular in China. Its Chinese-American cuisine thats presented to the world not the more original one in China. Filipino cuisine just hasnt transitioned yet into palatable Filipino-American. It certainly already happened in Thailand since Pad Thai was only invented in the 1930s-40s as a government program to Americanize Thai cuisine.

            I don't know what flip places you go to but in nyc the flip joints are all so different from one another they might as well be from different c**ts

            also, while I haven't been to every part of china, when I visited the guangdong region a few years ago I was surprised at how similar the restaurants felt to the chinatown restaurants I'm used to. the food was the same, the vibe was the same, the main difference was they had some weird aversion to giving out napkins. of course some american chinese restaurants serve stuff you'll never see in china, and some restaurants in china serve stuff you'll never see in the US, but the similarity is much closer than people make it out to be

          This is literally the best food I have ever had with any beer. But tbh a LOT of flip food is designed to be eaten with rice, it's really savory so you need the rice to balance it out.

          Sisig is god tier. The Filipino place near me makes it with leftover meat from their whole roasted pig.

    There are a few simple reasons why flip food is basically nightmare food for westerners:

    -Sweet and savory is seen as low class and it's a common flavor combo in flip food

    -Fermented ocean things, do I need to say more?

    -Due to repeat colonization, well known international dishes are incorporated into flip food but with adjustments to local taste, leading to shock and disgust by people expecting their idea of "authenticity"

    -The western cultural connotations of canned vs fresh are inverted because fresh fruits and vegetables literally grow on trees there, and any poor person can just eat it whenever he wants. But stuff in a can or a jar was, within living memory of a lot of flips, an exotic and sophisticated delicacy for world travelers and those with money. While supermarkets and canned stuff are now commonplace, the cultural significance is still meaningful, thus for celebrations or meals for honored guests, they hide all the fresh stuff and put out a full spread of stuff that westerners think is misery post-apocalypse food, this is considered a flex and an extravagant display of conspicuous consumption in the philippines

    -Lastly, acids form the backbone of a lot of flip food, and there's a culinary grammar around the use of acid that becomes muddled when you can't use the correct acid. For instance, in much of the west we just have "vinegar" but they have an entire section of the supermarket for different kinds of vinegar. Fruit acids and animal acids such as intestinal bile are also used. In the west, dishes that would have specified a particular kind of acid just get "vinegar" and the result is a mess.

    I could keep going, but hopefully that's a good starting point to help you understand.

      One of the things I liked is that you can go to a restaurant for lunch and buy a whole grilled fish with a side of rice and a glass of kalamansi (miniature lime) juice for a few dollars worth of pesos. That's a bit of a luxury in a lot of other places. If you go to a restaurant in the US and ask for a whole grilled and stuffed milkfish, it will probably be from a Chinese or Vietnamese mega-aquaculture disease pond, and it will probably cost over $20. In the Philippines, it's usually from the nearby ocean, and it costs closer to $4.

    You can choose just about any culture and cherry pick some bland, trashy, or otherwise kind of just nasty dishes that don't make much sense for people who didn't grow up with them. The difference with The Philippines is that you have to cherry pick the good dishes, and everything else is overwhelmingly bad.

    And I also enjoyed some of the soups. Like 'sinigang,' which is apparently a tamarind base with vegetables, and then other ingredients like shrimp. You can get a large bowl for fairly cheap prices.

    Philippines does some things well. They have a lot of fresh seafood and fresh vegetables/fruits, and food with those ingredients often tastes really fresh and flavorful. They also raise a lot of chickens and pigs. Food that uses a lot of canned/imported ingredients doesn't have those advantages.

    For example, I notice that Chinese-influenced foods like lumpia (a kind of spring roll) are often not even made locally anymore, but are imported frozen from Chinese factories. Or a lot of fast-food (especially burgers, since the Philippines doesn't have that many cows).

    What they do have locally, though, a water buffalo called a 'carabao.' When they get older and can't the work the fields, they are often eaten. And since they are old and tough, their meat is slowly simmered for hours in stews. That stuff is good, because it has a very rich flavor.

    It's a matter of knowing what to look for.
