i asked my dad what he thought about MSG, and it seemed like he is against it from a moral standpoint rather than any health reasons. he says that it is pretty much witchcraft to use it in food since you manipulate people to perceive something that isn't there (making bad cheap food taste good). i have to dig deeper on that since i can say the same thing about the jar of citric acid he has, but he fell asleep so i will do it another time.

    I’ve cut out squid and octopus (didn’t really eat them anyways though) once I saw how smart they are.

    The only flavor/texture enhancers I try to avoid morally are low quality cheap oils and corn syrup.

    I use msg for good, I use it to make beans taste more like meat so I'll eat more of them
    honestly thinking about it it's kind of like the whole ai art bullshit. big companies use msg in their junk food to make it taste better so you eat more doritos vs home cooks using it to make their meat and bean and mushroom dishes taste better. companies cutting corners with ai art vs some hobbyist who could never afford art but now he's got some neat looking labels for his homebrew

      he said that those are okay because they give nutritional value. i haven't countered him with the fact that msg is metabolized into l-glutamine. i don't think he will budge since he doesn't lightly call things witchcraft, but i want to see how far i can get before he just goes into pilpul mode

        He is okay with salt? Msg is literally a salt btw. The nutritional part of regular salt is sodium which is also in msg. Saying msg is bad because it enhances bad food is also a stupid argument because regular salt works in the same way both are flavor enhancer.

          i didn't do enough research to know at the time what msg metabolizes into, so i couldn't use it as a rebuttal to what you said. his comment about nutritional value was the response to me saying that table salt functions the same for elevating flavors
