OP, you are probably buying the wrong onion or not cooking it properly. Learn to cook first, and then figure out what you do and don't like.

On reddit, people will literally make threads asking how they can "sneak" ingredients into their own food. "My doctor said I should eat mushrooms, but I HATE THEM. How do I sneak them into my cooking without noticing? >_>" There are endless threads like this about every food, every day. They are such insufferable homosexuals.

i just realized that i pretty much phased onions out of my cooking. it's not as necessary as you may think unless it's the main ingredient like in french onion soup maybe

name one dish where it is a necessary addition

No single ingredient is "necessary" in the sense that you need it to live. You can live eating literally anything edible, like berries and leaves, and fresh roadkill. Onions are what we use when we want to make our food taste good. They are good because they aren't "necessary," but because we like them.

I love onions, but I haven't used them for any cooking in more than half a year. They aren't quite mission critical.

I'm planning on doing a slow five hour cook this Sunday to caramelized 9 lbs of onions or so. I do love onions, I just got tired of using them as a crutch.
