    This type of foods come from the time food was a valuable scarce resources, you ate the whole animal so nothing goes to waste, some of this dishes can be nice, sweet reads or of course liver, but triple is not one of them, you will feel inmediatly its distinctive taste and smell and the texture is shit, is not worth eating, I certainly never eat it is just way too repulsive and I eat snails without the butter sauce.

    Whatever you do, make sure you clean it like youve never cleaned it before.

    Soap, acid, lime, rub it with lemon, let it soak for half an hour, and then scrub it more. Loaded with protein, but easy to spoil a whole meal (the smell is why people are turned offf from menudo)

      Don't need to go ballistic on it. Just clean it well and use Chef Wang's smell removal mix (it's in one of his videos). Chinese cuisine has a thing against strong animal odors; that black vinegar, ginger, scallion and spice mixture is specifically designed to neutralize them.

    tripe is absolutely delish and I made tripe soup not too long ago.

    clean the tripe, let it reach the boil, replace water, let it reach the boil, replace water, cook until tender
    save the water, let the tripe cool down and cut into bite-sized strips
    put pork lard or beef tallow in a pot, fry off diced onion (200 g per kilo of tripe but I like to double that), add 150 g of fine white flour, ground paprika, salt, pepper, stir well and add saved water
    add cooked tripe, minced garlic, marjoram, let it reach the boil
    serve with some nice bread

    I'm not a picky eater I've eaten frogs, snakes, snails, lizards, sharks, I'll try anything once no homosexual but tripe just isn't good.
    I've had tripe in dumplings, soups curries whatever you do with it it's always fricking awful.
    I'd only eat it again if I was starving so maybe try fasting for 3 days to make it palatable. Or just feed it to a dog.
