I just woke up ate a 3 egg omelet with onions in it and now I'm drinking a big glass of pulpy orange juice.

The browning is fine so long as you have a squishy center. Brown the one side, then fold over. I did that just this morning. If you just brown both sides, that's when you get the rubbery aeg. Between the folded egg (seasoned with herbs de provence, salt and white pepper) I had some chopped spicy dried sausage, parmigiano and sauteed onions. Two slices of sour dough, left over baked beenz and a glass of clamato. twas good.

I slept in, grabbed the last slice of apple galette on my way out the door because I was in a rush. Regretted not having a proper meal because I was hustling from 8-3 without stopping. Tasty pastry though.

I drained a can of tun and mixed it up with panko, frozen mixed veggies, and mayo then made a couple tuna pancakes with the mixture. Topped with soy, sesame oil. And Sriracha
