        i use baking soda then a light egg wash to get them extra brown.
        I think we both didn't roll them thin enough and they puffed up into one big knot

            you boil the pretzel in 6cups water/1/2 cup baking soda for about 30 seconds before baking them. any longer they can get a metallic taste

    Tip. Get some food grade sodium hydroxide. Make a 4 percent solution and soak the pretzels in it for 1 min a side.
    Makes them taste exactly like mall store pretzels.

      Did a 60% hydration rate
      2.5tsp yeast
      Tsp salt
      3 tsp butter
      Couple spoons of sugar for the yeast

      Allowed to rise at 85 degrees for an hour
      Into the fridge overnight
