        not him, but its not because coconut is particularly strong, but because its very distinct with a slight acidic and tangy bit to it that doesn't quite blend with many people's assumptions for more savory dishes.

        I dont hate coconut curry, but I have to be in a very specific mood to want it and generally I prefer non coconut curries. I like coconut in other things more consistantly though like sweets.

    sheeky, marinaty ina sherry & a lil corn starchy add salt, white pepper
    grab jinja, lonyo, garli, et peppers rouges
    i always throw in snap peas too (at the very end)
    red curry paste, fish saw & can of the fattiest coconut milk you can find
    juice of lime and zest that lil b***h too we want it limey af
    garnish with toasted, sweetened coconut flakes
    i do chicken, set aside, veggies set aside, fry curry & aromatics, wine deglaze build sauce, simmer add shit back in, add lime/zest
    yum yum in ma tum

                its not that thick unless you want it that way and thicken it. i liken the normal thickness to a cream soup. When i get redcurry out at the thai place its more like brothy soup than what I make. the only similarity to the sauce and gravy is that they are both food.

    I've been converted to Sri Lankan and Hakka style curries, and Laksa since they call for a mix of both coconut and dairy and the end result is rich af
    Once you mix coconut cream with heavy cream and evaporated milk, you don't go back
