Eaten it in Namibia, but that was 30 years ago. I remember it to be pretty good for what it is, mainly dried meat with no frills. If you pay 100€/kg you get scammed, simple as.

Just make it yourself. All you need is a closet and a dehumidifier.

I can see you've never had biltong. It's no more jerky than salami is.

You can buy a 35€ piece of tenderloin and dry it yourself at 35€ per kg prices
problem is you prob need to invest in a drier machine first

You know that drying meat removes mass right? Sure you can buy a kg of meat for 35€, but you will get only ~500g of dried meat, which means the cost is 70€ per kg of finished product

kinda like if you buy 1kg 20% fat minced meat you will render all that fat out and after cooking the moisture loss means you're left with like 600g of cooked meat, while a 7% stuff would result in like 750g of meat.
so if you dont like the idea of buying useless fats always buy the lowest fat percentage mince possible

Biltong doesn't use a drying machine, it's air dried at a much lower temperature (~32C-38C) than jerky, so it isn't cooked by the drying process - biltong dried raw meat, jerky is dried cooked meat.

A drying machine can be set at 38c and circulate the air
its common to dry herbs that way so they dont cook

Biltong is not made with a drying machine, it is made by hanging it up in a room with a source of ventilation. If you live in a very humid area, such as near the sea, a room dehumidifier is helpful. For home use you can buy "biltong boxes" that are simply a wooden box with rails from which to hang the meat, with a CPU fan to circulate the air through it. But that's a far cry from the sort of dehydrator used to dry herbs or jerky, and certainly isn't needed. You can make biltong by hanging it from the clothes rack in an empty closet with the ceiling fan on.

A drying machine does literally the same thing as a biltong box, except less shitty.

how would you make jerky if you set a drying machine to run at 30-38c?

I love cured meats. When I eat lots of cured meat I sing a song I invented over and over. It goes

Man, I eat so much meat, man, they call me the meat man.
