        Yeah, that's how they make those turkey legs they sell at the Renaissance fair. They cook them once then they smoke them after, sure it is super well done but it has a lot more flavor. People seem to enjoy them.

    Yes, overcooking dark poultry meat only makes it more delicious. Of course, it's not really "overcooking", or it is, but only in a sense that you're cooking it past safe-to-eat temps. Same with kitchen thighs, for example. You want to reach 85 degrees Celsius.

    This has to do with needing to break down collagen into gelatin, for the meat to get tender and juicy.

    Yeah, anyone who has had supermarket rotisserie chicken knows this. Costco chickens are cooked to at least 183f for the largest bird. It's usually around 185-189f for the breast and the thigh will frequently reach 205-210f. It's still juicy and flavorful due to the brine.
