      browning a few lbs of top round in a cast iron on all sides, then roasting it in the oven in home made stock and lagerstroms toasted spice blend for a few hours

    Ya hey der. Chicagoan here, anon, step aside.

    I make mine 2x per year. Have the local advantage of D 'Amato's bread, same coal fired oven since pre-1871.

    Key is to bake more beef than you will eat. Double with half going into the dripping juice for dipping.

    And thyme and time. The rest is easy if you go slow.
