There is no pure high-end authentic butter chicken recipe that puts the rest to shame, they're all total slop recipes that just leech steps and ingredients from other recipes with no real culture or origin of its own.     >omit chicken because no matter how much effort you put into marinating and baking it there will be no difference to the flavor of the dish whatsoever
    >or if you really want it just fry some cut up chicken real quick and throw it in
    >add something green if you care about color
    >don't serve with rice because it just dilutes the amazing flavor for no reason
    >eat on its own or with bread
    Wa la it's literally that easy. You cannot frick up the proportions of ingredients unless you're moronic so just do what feels right.

    I don't substitute anything, I have fresh spices from the Mediterranean import market, garam marsala, asfoertida, fenugreek, I use good butter and good quality chicken and tomatoes, I grate the onions and ginger and garlic, I blend the shit after stewing it, every fricking time it tastes like shit
    I'm so fricking mad because Indian cuisine is the only food that I have trouble with
    Any Indian restaurant I've even been to, even the bad ones, make better curry than me
    No other cuisine can say that
