    Unless you can absolutely guarantee the sterility and cleanliness of your tools/utensils when making/serving ground beef, you're just asking for all sorts of foodborne bacteria/contamination. The vast majority of commercially available ground beef is processed from beef that's been cut/chopped multiple times by multiple different machines or hands, vastly increasing the potential for contamination. It's why you pretty much have to ensure you're cooking burgers to a higher temperature than full cuts of beef due to that issue of contamination.

    Unless you're grinding your own beef using carefully sanitized tools you're just asking for trouble.

    Probably not but I would think a fresh steak is probably safer to eat raw. You could buy one and make your own. This way you are not eating 100's of cows mixed together, also if it contains pork you definitely should never eat it raw.

      It ain't about the mixing, numbnuts. It's the massive amount of surface area exposed to grinding machines. Those surfaces are then pushed to the center. You could basically wipe the surface of a steak with lab-grade e.coli, and, provided you sear it well, have zero risk of infection. A few bits of that shit on a strand of ground meat, deep in the patty, can wreak hell on ya if not cooked.

        Yes I am posting on the cooking board I am aware of this. Also I am Belgian and steak tartare is a commonly consumed dish here. People tend to make it themselves from extremely fresh cuts of beef since everyone knows if you get it from the grocery store it might be mixed with pork. And how would you guarantee the freshness of the preparation if you are eating literally 100's of animals in a 100g tartare. This is impossible.

        They do but it is common knowledge pork is often mixed in even though the label says it is 100% pure beef.

    Pre-ground raw beef may be contaminated with O-157 or other dangerous pathogenic bacteria. If you want to eat raw beef, please buy clean steak and grind it yourself.

    You may also need to take antiparasitic medications regularly to avoid beef tapeworm infection
