Sap spirits are generally kino if properly brewed, aged, distilled, and blended. Maple, oak, birch, hickory, walnut, cherry, apple... all the hardwoods that aren't toxic, really.

Crappy mead (which is extremely common) is like drinking alcoholic honey water
Mead that hasn't been backsweetened tastes like a very dry (to the point of tasting off) white wine. You can add extra honey to an already fermented mead to sweeten it but you have to use a chemical to kill any living yeast in the batch. If you made a dry mead and it tastes off it's probably lacking tannins which can be fixed by adding some strongly steeped black tea to your recipe.
I just wanted to chime in and say that mead tastes like shit, but sake also tastes like shit.
