      Italians cannot into steaks and roasted meat apart from pork and chicken, the meat is trash and ultra lean, it’s always over cooked unless you go to a restaurant and most people generally don’t know how to cook it.

      I unironically learned from Americans thanks to internet and while I’m grateful I’m also ashamed of this because I’m from the food meme country myself.

          Ok anon, I didn’t want to post this but…this is what my mother cooked for dinner for my father 2 days ago.

          She just took the minced meat from the package (cold from the fridge) and tossed it into a semi cold nonstick pan, by the time it was cooked the juices boiled away and burned to the pan.

          I don’t expect you to share my pain because you know how to cook meat in your country, but this it’s a specular situation as to when we witness Italian American abomination food, sort of

      That's just the cryst from the butter, i used the same pan to make the toasts as well. Besides, the meat itself was thin to begin with, i can't afford to have the perfect juicy med-rare tenderloin like in ypur pic

        Pic related is a hanger steak (diaframma) and it costed me 3€ for 330 grams at the supermarket.
        Yeah I had to remove the excess fat on the second piece but that shit was good, you need to learn how to buy meat and different cuts.
        Avoid thin pieces (fettine) and buy at least 1/1.5 cm thick steaks, then learn how to cook by using a thermometer pen to check the internal doneness.

        Here’s some tips:

        >always remove the meat from the fridge at least 30 minutes before cooking it and pat the surfaces dry with a towel
        >preheat your pan, ideally cast iron / carbon steel or stainless steel so you can go high in temperature, if you have nonstick beware of high temperatures unless it’s a good quality pan because they’re not supposed to handle high heat
        >when the pan is read pour some high smoke point oil (olio di vinacciolo or avocado) and toss the steak in
        >flip the steak every 2-3 minutes and when the crust is formed lower the fire until it’s cooked to your liking

        You should check and learn with experience, however a 300 grams steak say 1,5 -2 cm thick is cooked to medium- medium rare in 7 minutes.

                oh wow, that is really cut wrong for skirt steak I typically grill it whole, then on my cutting board, make 6 inch portions, then do a slightly angled cross cut on each of those portioned sections. It's also controversial, but there is a sweet spot of well done that is far more tender than medium rare, on this cut of steak that has some tendons that need to break down.
