Ive noticed some people cook with unripe peppers. Why is this?

I’ve noticed some people cook with unripe peppers. Why is this? Surely every recipe with “green” pepper would be a LOT better by substituting properly ripened (red) peppers

    It's literally just for colour. Bell peppers barely taste like anything anyway and there's probably some other ingredient in the recipe that is supposed to be the centre of the dish.

    I grow peppers and can attest their are times when green peppers just taste better. It has a more crisp fresh flavor than a ripe pepper which is more deep and robust. It makes it a better sandwich topping, something you'd want in a salad or when you want a fresh crunch.

    If its ripe its too sweet in my opinion.
    It adds that sweetness which I dont like. I always use unriped, which is funny, because I also asked myself why the frick somebody would use unriped ones.
    I add small red hot ones combined with unriped ones, for the heat. If add other legumes too, it becomes way too fricking sweet.
    I add soy sauce, some chickpeas and bam I have myself a quick tasty meal.
