Lads, I need your help! I found this recipe for Carolina Gold BBQ sauce on Reddit:
1 cup yellow mustard
1/4 cup ketchup
1/4 cup cider or white vinegar
few grinds of black pepper
1 tblsp worcesteshire sauce
warm in saucepan to combine

It tastes way too mustardy and tangy for me. How do I cut that back? Do I add more ketchup? Or perhaps sugar?

Yeah try adding more ketchup. Or plain tomato sauce if you have it.

    you need to add sugar/honey/molasses
also recommend sauteeing some garlic in oil and adding that and then smoothing it out with an immersion blender

i know this sounds crazy but put the zest and juice of a large orange in. if its still too tangy add more. you wont taste the orange and your sauce will be smackin.

just put less mustard and vinegar in. both of those would add tanginess. you could also try dijon or other mustard types besides yellow.

a good amount of brown sugar and some kind of citrus is the way i'd do it. also instead of using classical yellow mustard you could mix in some other types- i have used sweet hot mustard and honey mustard along with the normal yellow and it came out really good. orange juice really brightens it IMO

North Carolina BBQ is widely recognized as one of the best. Saying otherwise means you have brain damage.

The BBQ is fine, your sauce is just trash. It's worse than ketchup.

I'd substitute half the yellow mustard with Dijon mustard, add a little garlic and onion and some honey or brown sugar to it, maybe a sprinkle of chili powder too. The ketchup does add some sweetness but not quite enough

Post your favorite region and sauce.
My favorite bbq was a restaurant in SE Missouri, they had pork ribs with a Carolina style vinegar based sauce.

They are wrong about kc sauce, im from kc.

Kc sauce is tomato based and has CELERY SEED as the secret ingredient. That's famous KC places like Gates, bryants, jack stack.

Some people dislike celery seed sauce so there is usually a hot n spicy and a sweet one too.

Mustard and vinegar in those quantity are too much, halve them and try it again.
