            Thanks. The burger went up, too, but it's still extremely cheap compared to anywhere else in the area (avg burger is $10 here and there's used to be $4.50 and it's now $5.75).
            I actually have to go around the corner from there on the 21st so I might grab a few burgers for dinner omw home. My kid has never had their weird, crispy burgers and I think he'd like them.

                Kicker is, the place is glatt kosher (ie no cheese) and the burger patties are deepfried (hence why they're crispy).
                I think the price is low to entice people to try the burger, like it and maybe come back some day to try some $24 lamb chops.

                They're not. If you get there right around opening, you can actually watch them form the patties by hand from a huge vat of mince that they put chillies and chopped onion in along with a powder I would guess is cornflour to help hold it all together.
                It's good stuff.
                Also, I'm not sure Sysco sell glatt kosher ingredients. Do they?

                The $24 lambchops are not the moneymaker you think they are. A typical food cost percentage is apparently 28-35%.

                So, the meat itself for a serving should be under 8$-- not even considering the two sides, rice, bread, and salad.

    not sure why but have tried cooking rack of lamb twice and each time the roasting directions were way too little
    >20 mins in oven
    >30 mins in oven
    always undercooked. will try it again this Easter but planning on at least an hour for roasting

      Pork smells way more gross than lamb to me. Lamb has a sort of musky odor, but pork straight up smells like feces sometimes.

    I used to like lamb long ago. It had a great flavor. But maybe it was just the lamb I was getting. I've tried it recently and it had zero flavor. I looked it up and apparently farmers brag about how mild their lamb tastes. Maybe I need to get some mutton, but who does mutton in USA? A mutton and barley soup sounds delicious but I think bland lamb would be a waste of time.

        I just called all the butchers within driving distance. No mutton. They can't even get it. The best I could find was New Zealand lamb and goat. Maybe goat and barley stew would be good. I'm looking for lots of flavor. A taste adventure.

          Try hogget. Bigger than all but the most monsters of lambs too. Mutton 90% of the time mutton you've got old culls good for dog tucker or slow cooking. Hogget is sheep around 1-2 years of age, a two tooth (has two large adult teeth). Lambs have yet to shoot those teeth. Mutton is sheep older than that, even those on their last legs. If thats hard to find in your shopping find someone with some sheep and get one of last years lambs it might be a tail ender who missed the truck but another year it'll be a big bastard

      Try getting Australian or Kiwi lamb. It is pretty much all grass fed and a lot of it is from breeds with more flavour than most American lamb. You guys import heaps, so it shouldn't be hard to find.

      New Zeeland, Ireland, Iceland and the Faroe Islands produce the best lamb from my experience. The more sheep has to exercise to get to the grass the better the taste.

    I was raised on lamb and mutton in the midwest. I loved it then and I try to eat it now. It's ridiculously expensive for what it is, so Sunday lamb roast is about the norm. Sheep and goats take care of themselves and don't need to be finished on grain -- I don't know why more farmers with decent acreage don't farm sheep and goats.

    Buy a whole rack of lamb.
    425F for 18 minutes in a convection oven.
    I use this old Sharper Image "Super Wave Oven", which I understand to be Halogen/Infrared/Convection, but I think it's basically a complicated air fryer.
    You'll need more or less time depending on the thickness of the rack (you'll have to experiment) for medium rare. I've definitely eaten more than my fair share of rare lamb chops while getting it right.
    Then let it rest for 5 minutes in the oven.
    The seasoning is:
    1 part salt
    1 part cumin (powder)
    1/2 part Chinese chicken powder (that Knorr shit or similar)
    1/5 part "grated ginger powder" 沙姜粉
    a bit of sugar
    a bit of pepper

      I understand where food comes from. If you eat dairy and not lamb or veal, you're a hypocrite since lamb and veal are byproducts of the dairy industry. You can't have dairy without making calves and lambs and they will almost invariably be slaughtered for meat.

      Seriously though if you think lambs are babies you should go pick up some clippers and spend a day giving them haircuts. The big ones will be 100lbs with ballsacks almost as big as your head and probably count on one hand the number of times a human has touched them before

      Lanolin.
      Even soap made from lamb's tallow will smell of sheep while those made of lard or beef tallow have little to no discernible odour.
