yeah definitely can dump in some protein if you're not having it as a side. I usually fry some sausage and mix it in, then top the whole deal with a fried egg or two. a can of tuna is okay as well
How to make good mac'n'cheese
1) Start browning some onions. Not sweating, not caramelizing, just browning.
2) Boil the pasta, like, 500g of macaroni or something
3) Grate 1lbs of cheese and prep 1 cup of butter
4) throw four diced garlic cloves with onions
5) spice onions with heavy pepper and salt
6) put 1/2 cup of milk in a saucepan, (large), start adding cheese
7) add all cheese until its melted, add butter
8) drain and strain pasta, keep in pot. add in cheese and onions
9) add smoked paprika and cayenne if you want extra flavor, to taste.
10) Also add some thyme and oregano. And rosemary.
11) ???
12) enjoy
Getting the obvious out of the way, bread crumbs and bacon. Ranch, hot sauce, buffalo sauce are all good. Horseradish can be good depending on the type of both the sauce and the mac. I like adding dried jalapenos to add some crunch sometimes. If I want a protein, I'll add chicken; I usually don't want beef with my mac.
