        OP the reason you probably prefer the margarine is that you were raised on this cheap seed oil imitation, and your brain has had to adapt to that. It could be semen based and you would still prefer it.

              OP here, genuinely surprised people prefer real butter. I have tried several brands of real butter and I have disliked all of them.

              Did you grow up with margarine? And what about real butter do you not enjoy?

                Yes, we never had real butter in the house, not even to cook with. It's entirely possible I'm just too used to margarine now and have gotten too old to change. I think butter is just lacking flavor. Other anon listed all those ingredients and all I thought was "damn, and butter has got nothing but cream and salt?" just seems like margarine obviously has more flavor with that in mind.

              If these fake butters were made from coconut or palm oil, I wouldn't have as much of a problem using them. Unfortunately they are made from sneed oils and industrial waste.

                Yeah I think you're right since you've already tried butter a few times.

                Both Palm and Coconut oil are factually cheap. But they are edible, stable fats that can be cold pressed and used from the fruit. Sneed oils need gasoline levels of refining to be usable.

                Why is palm oil bad? It should be as good if not better than Olive soyl. I believe it's 40-50% saturated fat content.

      Literally nothing has trans fats in it anymore. Like you have to seriously dig to even find a food that contains them. I think one of the last to give them up were McDonald's hamburger buns, but they switched over some time in the 2010's

    Bacon lard is better than lard, but lard works in a pinch.

      There's actually a lot of controversy between lard and butter. While higher in PUFA which are now being linked to cancer it's also higher in healthy MUFA and lower in cholesterol.

        wouldn't gram to gram be a better comparison than tbsp to tbsp? mass vs volume etc. I'd say the PUFA content would matter if it were a significantly higher relative volume but they're both inarguably better than veg oils.

        Reminder that room-temperature/shelf stable lard is NOT the same thing as real lard. It's been hydrogenated.

          I always cook my eggs in the fat rendered from bacon strips. Though I've heard processed meats like bacon increase your chance of cancer. IMHO PUFAs are exponentially worse than bacon.

            I agree, I mean to say that a fat that is room-temp-stable (hydrogenated lard) is not the same thing as rendered fat/lard directly from animal sources. Bacon like the stuff you're using is usually not treated to hydrogenate the fats, but it can be treated with nitrates and other curatives to make it last and give it the bacon-y flavor. I would say you're less likely to get cancer from low-process low-nitrate bacon than anything high in pufa, simply from an inflammatory standpoint. You're doing good. Just make sure you refrigerate your bacon fat, or even better do a heat-freeze cycle to try and get the water out.

    A good rule of thumb is the 'rational processing level' indicator. How many steps, whether in a factory or a kitchen setting, does it take to make something edible?

    Usually the more steps, the more inflammatory or un-like naturally available foodstuffs. Keep it simple. Saturated fats are not the enemy.
